Microsoft office access and excel 2007 question

I have a question which relates to both microsoft office access and excel 2007.
How do I read each individual character using the arrow keys either in a cell in a spreadsheet or a field in a database. The arrow keys let me move from one part of the file to another, but I cannot read it letter by letter or word by word. Because of this, I can't delete certain things in a cell/field, I end up deleting everything contained in it. Is there any way to solve these problems?

f2 then edit with arrow keys the cell or field you're in, then push enter

Thanks for your advice once again but I actually only tried it in excel which made me jump to the conclusion that it worked in both. Today, when using access, I discovered the F2 keystroke command doesn't work. Is there a way to edit fields in access if you come out of them and go back into them. Like I say at the moment I have to use the JAWS curser to navigate letter by letter and I have to delete the whole entry and retype everything to correct things.
